If you are into trail running in town, the TAM, one small segment of which is described in this run, is a convenient place to start.  You can peruse old posts, or just download a copy of the TAM map from the Blogroll of The Middlebury Trailrunner.  For road running, you can pretty much spoke out of town in pretty much any direction, but South St. (the stret heading past the hospital) is particularly popular due to its light traffic, open vistas, and dirt surface, which is easy on the legs.
